Created by Executive Chef, Guy Gorrie, guests will have the opportunity to experience a variety of creative dishes, paired with the award-winning Waterford wines, such as asparagus wrapped in pancetta with homemade mayonnaise or red onion and gorgonzola tart accompanied by ‘Pecan Stream Sauvignon Blanc’, or succulent grilled tiger prawns with grapefruit paired with ‘Pecan Stream Chenin Blanc’. Ostrich fillet with cherry skewers is the order of the day, paired with ‘Pecan Stream Pebble Hill’ or decadent fresh West Coast oysters topped with lime salsa accompanied by ‘Waterford Estate Sauvignon Blanc’ or guests may enjoy the deboned oxtail which is perfectly accompanied by ‘Waterford Estate Cabernet Sauvignon’.
